Ingredients
1 store-bought sheet of frozen puff pastry, thawed according to package
3 fresh peaches, washed and thinly sliced
3 tablespoons honey
1 tablespoon all-purpose flour
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
1 egg, beaten
Optional: Powdered sugar
Directions

                                                Preheat oven to 400°F.
 - 
                                                Unfold thawed puff pastry and cut into 9 equal sized squares. Place on parchment-lined baking sheet, spacing them 1-inch apart.

                                                In a medium bowl, gently toss sliced peaches, honey, flour, cinnamon, and vanilla until well combined.
 - 
                                                Layer 3 to 4 peach slices in the center of each puff pastry square, leaving space around the edges. Brush pastry edges with egg mixture.

                                                Place baking sheet on center of oven rack and bake for 17-20 minutes, or until puffed and golden brown around the edges.

                                                Remove tarts from the oven, place on a wire rack, and let cool completely.

                                                Dust with powdered sugar (optional). Enjoy!
