Ingredients
Sparkling Ginger Pear Cocktail
1 750 milliliter bottle of chilled sparkling white wine (preferably brut)
Ginger Pear Simple Syrup (see recipe below)
Garnish (Optional): Edible glitter (not sold at New Seasons stores), fresh rosemary sprigs, sliced pear
Ginger Pear Simple Syrup
2 ripe pears, washed and roughly chopped with skin on
1 knob of ginger, peeled and roughly chopped
1 cup sugar
1 cup water
Directions

                                                To make the Ginger Pear Simple Syrup, combine sugar and water in a small saucepan over medium-low heat, stirring to combine.

                                                Once sugar is dissolved, add chopped pears and ginger to the pot and bring to a gentle simmer for five minutes. Be careful to not boil or the syrup will overthicken.

                                                Remove from heat, add a lid and let steep for 20 minutes.

                                                Once cooled, strain syrup through a fine mesh sieve into a sealable container. Place into the fridge to chill until ready to use.

                                                To make a cocktail, add 2 teaspoons of Ginger Pear Simple Syrup to a champagne glass or flute, add a dash of edible glitter (optional), top with chilled sparkling wine. Garnish with pear slices and sprig of rosemary (optional). Note: Ginger Pear Simple Syrup will keep in an airtight container in a fridge for up to two weeks.
